The best way is always to use the original digital document, but this is a great way to get back a digital copy of a document if all you have is a scan. There will be mistakes, formatting you'll need to fix, and more. But then, it's still not the original document. It'll recognize most of the text and formatting, and you'll likely be surprised by how nice the finished exported document looks if it's not too complex.
